• Ingredients:
  • 10 oz package of FunGuy Mushroom Stuffers
  • 16 oz of macaroni pasta
  • 2 cloves garlic, minced
  • 1 small onion, minced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1½ cup whole milk
  • 10 oz shredded white cheddar cheese
  • Pinch of salt and black pepper
  • 1 oz shredded white cheddar
  • 1 tablespoon chopped fresh chives
  • 4 strips bacon

Don’t stop there though! Stuff those cheesy bites of creamy pasta into FunGuy mushrooms, add a sprinkle of crispy bacon and fresh chives on top, and it is sophisticated finger food that’ll please everyone!

DIRECTIONS:

  1. Preheat the oven to 375F.
  2. With a damp paper towel, gently clean each FunGuy mushroom of any debris. Pop out the stems and discard. Transfer the mushroom caps, hole side up, into a microwave safe dish buttered with ½ tablespoon of butter and set aside.
  3. Bring a pot of water to boil on the stove and add the macaroni pasta. Cook 7-9 minutes or until cooked through. Drain the pasta of excess water and return it to the pot, but not to the heat.
  4. While the pasta cooks, prepare the cheese sauce.
  5. In a large sauté pan melt the butter over medium heat. Add in the garlic and onion and allow to cook 1 minute. Whisk in the flour to create a thick paste. Allow it to cook 1-2 minutes or until it smells lightly nutty. Pour in the milk, whisking the entire time. Bring the mixture to a simmer, stirring frequently.
  6. Stir in the cheese and allow it to melt. After the cheese has melted add in the macaroni and stir well to combine. Add half of the chives and season with salt and pepper and stir again.
  7. Place two layers of paper towels on a microwave safe plate. Lay the bacon strips on the paper towels and lay two paper towels on top of the bacon. Microwave the bacon on high for 4 minutes. If the bacon isn’t crisp enough to your liking, microwave an additional 1-2 minutes checking every 30 seconds. Once cooled enough to be able to touch, crumble the bacon into bits.
  8. Spoon the mac and cheese into the mushroom caps and sprinkle the bacon bits, more shredded cheese, and the rest of the chives on top.
  9. Place the stuffed mushrooms in the oven and allow them to bake 10-15 minutes or until the cheese on top has melted and browned lightly.
  10. Remove the mushrooms from the oven and allow them to cool 5 minutes before serving.
