• Ingredients:
  • 2 tablespoons olive oil
  • 8oz package of sliced FunGuy white button mushrooms
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • ½ teaspoon dried oregano
  • ½ teaspoon parsley
  • ½ teaspoon salt
  • 1 cup cooked rice
  • 4 medium sized zucchini
  • ½ cup shredded Gouda cheese

Summer time is all about relaxing, but you know who’s not relaxing? The zucchini plants, that’s who! They are out of control this summer, much like every summer, and there is a need to cull the squashy herd in the most delicious manner.

Something like FunGuy zucchini boats filled with healthy things like rice, tomatoes and, our favourite, mushrooms is just the thing! Top with a bit of cheese and even the kiddos will want more.

DIRECTIONS:

  1. Heat olive oil in a sauté pan over medium high heat. Add in the FunGuy mushrooms, onion and garlic. Cook for 3-5 minutes, stirring frequently. Add in the tomatoes, oregano, parsley and salt and stir well to combine and cook another 5 minutes.
  2. Transfer the mushroom mixture to a bowl and add in the rice and stir together.
  3. Wash the zucchini well and trim both ends before cutting them down the middle lengthwise. Lay the zucchini on a lined baking sheet with the cut side up. Scoop out the seeds and then fill with the zucchini halves with the mushroom and rice filling. Sprinkle the cheese on top and place in the oven to bake 25-30 minutes or until the cheese has browned lightly and the zucchini is tender.
