• Ingredients:
  • 1 premade pie crust
  • 2 tablespoons olive oil
  • 8oz package of sliced FunGuy white button mushrooms
  • 1 large red onion, sliced
  • 3 eggs
  • 6 ounces quark (or light cream cheese), room temperature
  • 2 ounces blue cheese, room temperature
  • 1 ¾ cups whole milk
  • Freshly ground pepper
  • Pinch of salt
  • 1 teaspoon chopped fresh chives, plus a little for garnish

With spring here it’s time to take a crack at something new in the kitchen; the quiche!

This savory tart is full of spring flavor but doesn’t forget the rich tastes of winter, making it the perfect transitional dish between the two seasons.

It’ll be the masterquiche of Sunday brunch!

DIRECTIONS:

  1. Preheat oven to 400F.
  2. Roll out the pie crust on a lightly floured surface to 1/8th inch thickness. Fold the pie crust in half and place over a pie tin with the folded seam in the middle. Unfold the pastry so that it fits over the tin, pressing down into it and around the sides. Trim any excess pastry from around the edges.
  3. Line the pie shell with parchment paper and fill it with a single layer of dried beans. Place the crust into the oven and bake about 8-9 minutes. Remove the tin from the oven and allow it to cool 5 minutes. Remove the parchment paper and beans and discard.
  4. Reduce the oven temperature to 375F.
  5. Heat the olive oil in a pan over medium high heat. Add the onions to the pan and cook for 1 minute. Reduce the heat to medium and allow the onions to cook another 5 minutes. Toss in the FunGuy mushrooms and sauté for 10-15 minutes or until soft and lightly browned.
  6. Stir together quark and blue cheese in a bowl. Add in the eggs one at a time, blending well with each addition. Stir in the milk with a whisk and season with salt, pepper, and the chives. Pour the filling into the pie crust and sprinkle the onions and mushrooms around the top of the quiche.
  7. Bake the quiche for about 25-30 minutes, or until the filling has puffed up and is a golden brown. Insert a tooth pick in the center to check for doneness. It’s done when it comes out clean.
  8. Remove the quiche from the oven and allow it to cool 5 minutes before garnishing with chives, slicing and serving.
