• Ingredients:
  • 10 oz package of FunGuy Mushroom Stuffers
  • 1 medium bell pepper
  • 1 small onion
  • 1 large boneless skinless chicken breast, frozen
  • 2 tablespoons olive oil
  • Pinch of salt
  • ¼ cup light cream cheese

No game day party food table is complete without some FunGuy inspiration.

Turn those traditional snacks into easy mushroom filled bites. Like these chicken cheese “steak” stuffers that take all the goodness of a cheese steak sandwich, make it healthier, and then shove it into a mushroom!

We suggest you make two batches of these, as they’re sure to disappear!

DIRECTIONS:

  1. Preheat oven to 375F.
  2. Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and/or a small teaspoon to remove any leftover bits and place each mushroom cap on a parchment lined baking sheet. Discard the stems.
  3. On a cutting board, thinly slice the bell pepper and the onion. Cut them again into ½ inch lengths. Thinly slice the chicken on a clean cutting board and then again into ½ inch length strips.
  4. Heat the olive oil in a sauté pan over medium-hi heat. Toss in the chicken, stirring occasionally, and allow it to brown lightly before adding in the onion and bell pepper. Once the onion and bell pepper have been added, allow them to cook about 5-6 minutes or until the onions and peppers have softened.
  5. Transfer the cooked chicken, onion, and bell pepper to a bowl and stir in the cream cheese. Spoon the filling into each mushroom cap.
  6. Place the stuffed mushrooms in the oven and allow them to bake for 20 minutes.
  7. Remove the mushrooms from the oven and allow to cool 5 minutes before serving.
