• Ingredients:
  • 10 oz package of FunGuy Mushroom Stuffers
  • 2 cloves garlic, peeled
  • 1 cup fresh flat leaf parsley
  • ½ cup fresh cilantro
  • 2 tablespoons fresh oregano leaves
  • ¼ - 1 teaspoon red pepper flakes
  • ½ cup olive oil
  • 3 tablespoons vinegar
  • Pinch of salt
  • Freshly ground black pepper
  • Ranch dressing

It’s all hallows night and those with the sugary sweet tooth are out and about enjoying the frightening festivities. But what about those with a more grown up taste? Don’t worry your little head this year, because there’s something for everyone on Halloween!

These spicy FunGuy skulls are just the thing for any spooky dinner party, or to snack on while getting that monster movie marathon on.

That is, of course, if you can handle the heat!

DIRECTIONS:

  1. Preheat the oven to 375F.
  2. Brush off any debris from the FunGuy mushrooms with a damp towel and chop them on a cutting board. With a paring knife, carefully cut a triangle out of the mushroom cap for a nose and small holes for the eyes. Turn the mushrooms upside down and remove the back half of the stem and cut down length wise on the front side to make teeth.
  3. Place the garlic, parsley, cilantro, oregano, red pepper flakes, olive oil, vinegar, salt, and black pepper into a blender or food processor and puree. Taste and add more salt, pepper or pepper flakes as needed. Pour the chimichurri sauce into a large bowl.
  4. Add the mushroom skulls to the bowl and toss well to coat the mushrooms well.
  5. Place the mushrooms on a parchment lined baking sheet cap side up. Put the mushrooms in the oven and allow them to roast 15-18 minutes or until tender.
  6. Serve warm with ranch dressing on the side.
