• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 1 medium red onion
  • 1 small green bell pepper
  • 1 red chili pepper
  • ¼ cup black olives, sliced
  • 1 large bag tortilla chips
  • 1 ½ cup shredded cheese

A super game requires some super snacks! But you don’t want just a bowl of chips and dip for such a party. Instead spice it up with a huge plate of nachos!

These nachos get some super treatment by being warmed in the oven with real cheese to keep them from being a soggy mess. Oh and did we mention they’re super fun too ‘cause they are loaded with FunGuy mushrooms!

DIRECTIONS:

  1. Preheat the oven to 375F.
  2. Brush off any debris from the FunGuy mushrooms with a damp cloth. Cut them into quarters and set aside. Peel the onion and remove the seeds and stem from the bell pepper. Dice them both and set them aside. Slice the red chili pepper, careful not to touch the seeds or the white connective bits. Alternatively you can use latex gloves to keep the oil from the pepper from your skin. If full strength chili spice is too much, remove the seeds to keep the flavor but loose much of the heat.
  3. Place the tortilla chips in a large casserole dish and begin to layer mushrooms, onion, bell pepper, and cheese. Top with the sliced chili pepper and olives and more cheese.
  4. Place the nachos in the oven for 8-10 minutes or until the cheese has melted and the mushrooms are tender.
  5. Serve warm along with extra salsa, guacamole and sour cream!
