• 8 uncooked sausages
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 large onion, sliced
  • 1 bell pepper, sliced
  • 8oz package of sliced FunGuy white button mushrooms
  • 1 bottle of your favorite beer
  • ½ cup cherry tomatoes
  • 1 teaspoon dried oregano
  • 14.5oz can diced tomatoes
  • fresh basil leaves
  • salt
  • pepper

Warm up this autumn with a dish perfect for Oktoberfest. Not only will it eliminate that chill, but it’ll make your kitchen smell unbelievable with the mouth-watering aroma of simmering sausage, mushrooms and beer.

So good, you’ll have to make it again after the festivities are all done, just like the FunGuy we know you are!

DIRECTIONS:

  1. In a deep pan over medium-high heat, brown the sausages on each side. Remove them from the pan and add in olive oil.
  2. Once olive oil is hot, add in garlic and onions. Cook until browned and fragrant, about 2-3 minutes.
  3. Toss in FunGuy mushrooms and sauté until browned around the edges on both sides; about 5 minutes Add in the bell pepper and cook another 3-4 minutes.
  4. Pour beer into the pan and scrape any browned bits from the bottom with a spatula.
  5. Prick the  sausages with a fork and add them back to the pan. Add in the cherry tomatoes, oregano and diced tomatoes. Reduce heat to medium-low and partially cover with a lid, allowing everything to simmer until the sausages are cooked through and reduced by approximately half.
  6. Season with salt, pepper and fresh basil leaves to taste.
  7. Serve immediately with crusty bread to sop up all that delicious sauce!
