• Ingredients:
  • 8oz package of sliced FunGuy white button mushrooms
  • 6 boneless skinless chicken breasts,
  • ¼ cup shredded asiago cheese
  • 12 slices parma ham
  • salt
  • black pepper
  • 2 tablespoons olive oil

Tired of the same old dry chicken breast for dinner? Then it’s time to do it like the FunGuy does and make it feel new again!

Tonight wrap that chicken up in a blanket of parma ham and stuff it full of aged asiago cheese and mushrooms.  It only takes a minute or two longer and your family, and dinner, will thank you.

 

DIRECTIONS:

  1. Lay the chicken breasts on a cutting board and carefully cut through each one horizontally, making sure not to cut all the way to the other side so they may be opened like a book. Open each and season the inside with a pinch of salt and black pepper.
  2. Spread the FunGuy mushroom slices on one side and sprinkle with asiago cheese. Close the chicken breast and wrap two slices of parma ham around each one to hold it closed.
  3. Heat olive oil in a saute pan over high heat. Place the chicken breasts into the pan and allow to sear on the outside for 1 minute before turning and allowing it to sear on the other side. Reduce heat to low and cover with a lid. Allow too cook 10-12 minutes or until the internal temperature reaches 165F.
  4. Transfer the chicken to a cutting board and allow to rest 3-5 minutes before slicing and serving.
  5. Have a Fun new meal!
