• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 8oz package of sliced FunGuy white button mushrooms
  • 3 tablespoons butter
  • 3 cups chestnuts, shelled
  • 2 strips thick cut bacon, diced (optional)
  • 1 onion, minced
  • 2 cloves garlic, minced
  • 2 teaspoons fresh thyme
  • 1 bay leaf
  • 3 tablespoons all purpose flour
  • 1 tablespoon Worcestershire sauce
  • 4 cups vegetable stock
  • 3 cups milk
  • Freshly ground pepper

Start the first gluttonous meal of the festive season with a bowl of creamy, delicious, and hearty soup! A soup that speaks to the FunGuy in all of us with the use of the ultimate seasonal nut; chestnuts!

No need to roast them over an open fire, just a quick toast then give them a long warm soak in a pot full of mushroom and herb goodness!

DIRECTIONS:

  1. Brush off any debris from the FunGuy mushrooms with a damp cloth and roughly chop the whole mushrooms.
  2. Melt the butter in a big soup pot over medium low heat. Increase the heat to medium and in all of the mushrooms, chestnuts, and bacon to the pot. Sauté the mushrooms until the sliced ones and the bacon are nicely browned. Transfer the sliced mushrooms, half of the bacon and 3 or 4 chestnuts to separate bowls, cover them and set aside.
  3. Toss the onion, garlic, bay leaf, and thyme into the pot. Stir until the onions have become translucent. Stir in the Worcestershire then sprinkle the flour into the pan, stirring until the flour has soaked up the liquid of the pan and has become pasty. Pour in the vegetable stock and bring the pot to a boil.
  4. Pour in the milk, stirring well to combine. Cover with a lid and bring it back to a boil. Once it boils, add in the sliced mushrooms and reduce the heat to medium low. Allow the soup to simmer about 10 minutes.
  5. Season the soup with salt and freshly ground pepper to taste about 5 minutes before serving.
  6. When ready to serve, roughly chop the chestnuts and sprinkle them and the bacon bits on top of each bowl.
