• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 3 cloves garlic
  • 1 egg, beaten
  • 4 chicken breast cutlets
  • A pinch of salt and pepper
  • 2 tablespoons vegetable oil
  • 4 tomatoes, sliced
  • 1 small onion, sliced
  • 1 avocado, diced
  • Olive oil
  • Salt and freshly ground pepper

There are few things in this world that are good crusty and all of them seem to be food; fried ice cream, freshly baked bread and anything fried.

What if instead of using the good old bread crumb for creating that crusty crunchy exterior you change it up and use minced FunGuy mushrooms instead? That’s what happened with these chicken cutlets making them healthier and more flavorful!

DIRECTIONS:

  1. Brush off any debris from the FunGuy mushrooms with a damp cloth. Trim the ends of each mushroom stem and discard.
  2. Place the mushrooms and garlic cloves into a food processor and pulse until chopped well but not a paste. Transfer the mushrooms and garlic to a shallow dish.  Pour the beaten egg into a shallow bowl.
  3. Heat the vegetable oil in a pan over medium high heat.
  4. Season the chicken cutlets with a pinch of salt and black pepper. Dip each cutlet into the egg then into the mushrooms, making sure each side is coated before laying it into the hot pan. Allow the cutlets to cook 4 minutes on one side before turning and allowing it to cook another 2 minutes. Cover the chicken and reduce the heat to low and allow to cook another 5 minutes or until cooked through.
  5. While the chicken is cooking make your salad by tossing together the tomato slices, onion, and avocado in a bowl with a drizzle of olive oil. Season the salad with salt and freshly ground pepper to taste.
  6. Serve hot!
