• 8oz package of whole FunGuy white button mushrooms
  • 2 tablespoons butter
  • 1 dozen eggs, hard boiled
  • ¼ cup mayonnaise
  • ½ teaspoon dried dill
  • 2 tablespoons white vinegar
  • 2 teaspoons mustard
  • salt and pepper

Pastel colored plastic grass and chocolate bunnies aside, we all know what everyone really wants for spring; deviled eggs! The best part of these deviled eggs though has nothing to do with the eggs. It has all to do with the crispy mushroom bits thrown into the filling and sprinkled on top. It’s almost as good as bacon.

DIRECTIONS:

  1. Clean the FunGuy mushrooms by brushing them with a damp cloth. Dice the mushrooms and set them aside.
  2. Melt the butter in a frying pan over medium heat. Add the diced mushrooms and saute for 3-4 minutes or until crisp. Remove the pan from the heat and allow the mushrooms to cool.
  3. Carefully peel the hard boiled eggs and rinse them under cool water. Pat each dry with paper towels before cutting each egg in half. Scoop out the yolk and place it into a bowl along with the mayonnaise, dill, vinegar and mustard. Mix everything together until creamy. Season with salt and pepper. Add ¾ of the mushrooms to the bowl and stir together.
  4. Carefully spoon the yolk and mushroom filling into each egg half and set on a plater. Sprinkle the left over crispy mushroom bits on top of each deviled egg.
  5. Serve immediately or cover and refrigerate until ready to serve.
