• 2 10 oz package of FunGuy Mushroom Stuffers
  • 2 cloves garlic, minced
  • 1 cup fresh baby spinach, finely chopped
  • ½ cup plain Greek yogurt
  • 1/3 cup shredded cheese
  • pinch of salt

Welcome spring! This year the FunGuy wants to add one more yummy recipe to your menu.  A healthy mushroom stuffed with fresh green spinach leaves mixed with tangy creamy Greek yogurt and just a sprinkle of cheese on top.

DIRECTIONS:

  1. Pre-heat the oven to 400F.
  2. In a bowl, mix together garlic, baby spinach, yogurt and season with salt to taste. Set aside.
  3. With a damp cloth, brush off any dirt from the FunGuy mushrooms and pop out the stems with your thumbs. Lay the mushrooms, hole-side up, on a baking sheet or large casserole dish lined with parchment paper.
  4. Stuff each mushroom with the spinach mixture until over flowing and sprinkle cheese on top of each.
  5. Place the mushrooms into the oven and allow to bake 15-20 minutes or until the cheese has melted and the mushrooms and nice and tender.
  6. Serve hot.

Bringing this appetizer to a place with a kitchen? Just prepare the mushrooms at home in advance cover with aluminum foil and request use of the oven for the allotted cooking time, so they can be nice and hot when served.
