• Ingredients:
  • 2 tablespoons olive oil
  • 2 8oz packages of sliced FunGuy white button mushrooms
  • Pinch of salt
  • 2 10oz packages of puff pastry
  • Flour for dusting
  • 4oz soft goat cheese
  • 2 tablespoons melted butter

Biscuits are over rated. They get too much table time, and who knows if you’re getting the perfect soft melt-in-your-mouth version or the hockey puck

“Okay, what should I change too then?” you ask. Why these Goat Cheese FunGuy Mushroom Puffs of course! They are guaranteed to come out puffy and fluffy every time and filled with the perfect combo of mushrooms and creamy goat cheese.

There’ll be no regrets making the change this holiday season from you or your guests.

DIRECTIONS:

  1. Preheat oven to 400F.
  2. Heat olive oil in a sauté pan over medium high heat. Toss in the FunGuy Mushrooms and sauté them for 4-5 minutes or until browned. Season with a pinch of salt and remove from the heat.
  3. Dust a large cutting board with flour and lay out the puff pastry. Lightly dust the top of the puff pastry with flour and roll out with a rolling pin a couple of times to stretch the pastry out a little more. Lightly flour a 2 ½ or 3 inch round cookie or biscuit cutter and cut out 16 rounds.
  4. Lay 8 of the rounds out onto a lined baking sheet spoon a small amount of mushroom onto each round and top with a small amount of goat cheese. Wet a finger and run it around the edge of the bottom pastry before toping with another round of pastry. Press the edges together to seal the pastry and poke a hole in the top with a toothpick to allow steam to escape while cooking. Brush the top of each pastry with the melted butter and place in the oven to bake for 20-25 minutes or until golden brown and puffy.
  5. Remove the mushroom puffs from the oven and repeat with the other puff pastry sheet and the rest of the mushrooms and goat cheese.

Serve as appetizers or alongside the main course instead of biscuits or bread!
