• INGREDIENTS
  • 2 8oz packages of whole FunGuy white button mushrooms
  • 2 cloves garlic
  • 1 shallot
  • 2 teaspoons salt
  • 1/3 cup white wine vinegar
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground allspice
  • 2 tablespoons honey
  • 1 ½ cup water

Did you know? Ketchup originated in China as the brine of pickled fish and spices. No tomato to be found!

If that’s not enough to boggle your mind, get this; the British first made their version of ketchup with mushrooms.

Just imagine slathering FunGuy mushroom ketchup all over a chargrilled burger… or served with a juicy steak… or as a dip for some crispy onion rings… We can’t wait either!!

Directions

  1. Place mushrooms, garlic cloves, and shallot in a food processor and pulse 2 – 3 times to roughly chop.
  2. Pour mixture into a bowl and sprinkle with salt, stirring evenly to distribute throughout. Allow to sit 2 hours, stirring occasionally with a spoon.
  3. Pour mushroom mixture into a sauce pan over medium-high heat. Add in honey, vinegar, clove and allspice to the pan and stir to combine. Bring mixture to a boil, stirring occasionally.
  4. Pour water into the pan and reduce heat to low and allow to simmer, stirring frequently. Allow to cook until reduced down to a thick consistency,  approx. 1 hour.
  5. Remove from heat and allow to cool to room temperature before serving or pouring into a lidded container to store in the refrigerator for up to a week.
