• Ingredients:
  • 2 cups broccoli, chopped into small florets
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 8oz package of sliced FunGuy white button mushrooms
  • 1/4 cup plain Greek yogurt
  • ½ cup cottage cheese
  • ½ cup shredded white cheddar cheese, divided
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Everyone wants a FunGuy at their home on game day. The best way to get him there is with a hot, melted cheese and broccoli dip that’s good for eating with chips, crackers, veggie sticks or even with a wandering finger!

Just be sure to keep those digits clean if you’re going to be taste testing before the guests arrive.

DIRECTIONS:

  1. Preheat oven to 350F.
  2. Bring a pot of water to a boil on the stove. Once the water is boiling, carefully place the broccoli into the pot and cook about 3-5 minutes or until bright green. Quickly transfer broccoli to an ice bath to cool.
  3. Heat olive oil in a sauté pan over medium high heat. Add in the onion and garlic, sautéing until onion is translucent. Add in the FunGuy Mushrooms and cook another 5 minutes. Remove from heat and place in an oven safe dish.
  4. Drain the broccoli of excess water and add to the dish with the mushrooms.
  5. Add in the plain Greek yogurt, cottage cheese and half of the cheddar cheese to the broccoli and mushrooms. Season it with the salt and pepper and stir well to combine. Sprinkle the last of the cheese on top of mushrooms and broccoli and place in the oven to bake for 20-25 minutes or until cheese has melted.
  6. Remove the FunGuy Broccoli dip from the oven and allow to cool 5-10 minutes before serving.
