• Ingredients:
  • 2 8oz packages of whole FunGuy white button mushrooms
  • 2 tablespoons vegetable oil
  • ¼ head of nappa cabbage, shredded
  • 5 green onions, or scallions
  • 3 cloves garlic
  • 1 inch fresh ginger
  • 1 tablespoon soy sauce
  • 1 tablespoon hoisin sauce
  • 32 wonton wrappers
  • Vegetable oil for cooking

Ring in the lunar year with some FunGuy approved Chinese mushroom dumplings!

Made into the shape similar to old gold and silver ingots, these delicious bites are said to symbolize prosperity. Some people even hide a coin in the middle of one of the dumplings for one lucky eater, but we think it’s probably luckier to keep that coin in your pocket rather than potentially chip a tooth. A trip to the dentist is never lucky.

DIRECTIONS:

  1.  Brush off any debris from the FunGuy mushrooms with a damp cloth. Trim the ends of each mushroom stem and discard. Dice the mushrooms and set aside.
  2. Cut the green tops off the onions and set aside. Mince the white part of the onion, garlic and ginger together and set aside. Mince the onion tops and set aside separately from the other onion.
  3. Heat vegetable oil in a wok over medium high heat. Toss the onion, garlic and ginger into the wok and sauté for 1 minute. Toss in the mushrooms and sauté another 3 minutes, stirring frequently. Season with the soy sauce and hoisin and cook another 2-4 minutes. Remove from the heat and add the green onion tops to the mixture and stir to combine.
  4. Using a teaspoon, scoop a small amount of the filling and place on each wonton skin, remember that less is more.
  5. Wet a finger and run it around the edge of the wonton wrapper. Fold the wrapper in half and press the edges together, pushing the air out.
  6. To make the pleats fold and pinch at the top of the edge to make the first pleat, then work your way down one side and then down the other in the same motion. Place the finished wontons on a dry surface.
  7. Heat about 1-2 teaspoons of vegetable oil in a non-stick pan over medium heat. Place a layer of dumplings, flat side down, in the bottom of the pan and cook about 1 minute.
  8. Add ¼ cup water to the pan and cover immediately. Allow it to steam the wontons for 2 minutes. Remove the lid and continue to cook until the water has evaporated. Remove the dumplings from the pan and repeat with the rest of the uncooked ones.
  9. Serve these dumplings warm with soy sauce, hoisin, and chili oil!
