• Ingredients:
  • 3 tablespoons butter
  • 8oz package of sliced FunGuy white button mushrooms
  • 1 small onion, minced
  • 2 cloves garlic, minced
  • 1 pound pork, cut into cubes
  • 1/2 teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ teaspoon dried thyme
  • 2 tablespoons Dijon mustard
  • ½ cup heavy cream
  • 1 cup frozen peas
  • 4 cups cooked white rice

Like this recipe for tangy creamy mushrooms and pork with vibrant peas over rice. Perfect for when the chill has set in the air and all you want is a bite of comfort.

DIRECTIONS:

  1. Melt butter in a sauté pan over medium high heat. Add in the FunGuy mushrooms, onions, and garlic and allow them to cook 3-4 minutes. Remove mushrooms from the pan with a slotted spoon and set aside.
  2. Season the pork with salt, pepper, and thyme then add them to the sauté pan and allow the meat to brown in the butter, about 5-7 minutes. Transfer the browned pork to the mushrooms.
  3. Reduce the heat to medium low and add the Dijon mustard to the pan, stirring as you do. Pour in the cream, stirring continuously to combine. Bring the liquid to a simmer before adding the pork and mushrooms back into the pan and allow to cook 15-20 minutes or until cooked through.
  4. Just before finished cooking, add in the peas and cook 2-3 minutes.
  5. Serve warm over white rice.
