• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • ¼ cup olive oil
  • 3 cloves garlic, minced
  • 1 onion, diced
  • ½ pound cabbage, chopped
  • 5 ounces day old bread, cut into chunks
  • 1 16oz can butter beans, drained and rinsed
  • Salt to taste

Have a forgotten loaf of bread just lazing about the kitchen waiting for someone to remember it? Yeah, that never happens here either. But if that’s the case in your cozinha, then any FunGuy would recommend making a batch of these Portuguese style Migas!

All the bread lovers out there, don’t fret, you can always grab some day-old bread from your bakery and do the same but with unforgotten bread.

DIRECTIONS:

  1. Brush off any debris from the FunGuy mushrooms with a damp cloth and trim the ends.
  2. Bring a pot of water to a boil on the stove over high heat. Add the cabbage and allow it to cook 3-5 minutes, or until tender. Drain excess water and set aside.
  3. In a large sauté pan, heat the olive oil over medium heat. Add in the garlic and onion and cook until the onion is translucent, stirring frequently. Next add in the mushrooms and the cabbage to the pan and sauté for 1-3 minutes. Add in the bread and cook until it’s browned and crisp. Lastly add the beans, stirring to combine. Season with salt and cook for an additional 5 to 10 minutes or until the beans are heated through.
  4. Serve immediately by itself, alongside some roasted meat or with a fried egg on top!
