• INGREDIENTS:
  • 1 tablespoon mustard
  • 2 tablespoon natural peanut butter
  • 1 tablespoon cider vinegar
  • 2 tablespoons honey
  • 1 ½ cup shredded cabbage
  • 4 tablespoons olive oil, divided
  • 1 onion, finely chopped
  • 2 8oz packages of sliced FunGuy white button mushrooms
  • 1¼ cup canned black beans, rinsed
  • ½ teaspoon Italian seasoning
  • ¼ cup bread crumbs
  • 1 ½ tablespoons ketchup
  • 8 slider buns
  • ½ onion, sliced

There are burgers with mushrooms, and then there are mushroom burgers.

Now meet the FunGuy Slider. It’s not your average burger with mushrooms on top, but inside the patty and on top!

This is how a mushroom burger should be done, mini style. It’ll have you sliding into home on your first swing!

DIRECTIONS:

  1. In a bowl, whisk together mustard, peanut butter, vinegar and honey. Pour mixture over shredded cabbage and toss to coat. Cover with plastic wrap and refrigerate until ready to use.
  2. Heat 2 tablespoons olive oil in a non-stick pan over medium-high heat. Reduce heat to medium-low and add onions to the pan and cook until browned, soft and sweet, about 10-15 minutes.
  3. Cut mushroom slices in half on a cutting board and add to browned onions, reserving some raw mushrooms for topping. Season with a pinch of salt and raise the heat to medium-high and saute until mushrooms have browned, about 5-6 minutes.
  4. Transfer mushrooms and onions to a bowl and set aside.
  5. Place black beans on a cutting board and with the back of a spoon, smash them into a paste. Add the black beans to the mushrooms and onions. Add Italian seasoning, bread crumbs, and ketchup to the bowl and mix together with your hands.
  6. Divide the mushroom mixture into 8 equal pieces and roll them into balls. Flatten and shape each ball into a patty and set on a plate. Cover plate with plastic wrap and refrigerate for 30 minutes.
  7. Heat 2 tablespoons olive oil in the pan over medium-high heat. Place each patty into the pan to brown, about 2-3 minutes each side.
  8. Add mushroom and onion slices to the pan and allow to fry until crispy. Transfer to a paper towel to drain excess oil.
  9. Lay each slider bun cut side down in the pan to toast it for a minute.
  10. Place each mushroom patty on the buns and top with slaw and crispy onions.

This can be made into regular burgers by making larger patties and placed on regular buns, but don’t forget that crunchy slaw on top!
