• INGREDIENTS:
  • 8oz package of sliced FunGuy white button mushrooms
  • 16oz rigatoni pasta, dry
  • 1 small zucchini, sliced thinly and cut in half moons
  • ½ red onion, thinly sliced
  • 2-3 tablespoons pesto
  • water
  • salt

Keep it cool this summer like a FunGuy!  We know it’s hard to do with the soaring temperatures, but we’ve got you covered with a cold pasta salad that’s easy to make and tasty too.  It’s also great for those day trips to the beach and picnics at the park because it’s dressed with yummy pesto instead of mayo!

DIRECTIONS:

  1. Bring a pot of salted water to a boil over high heat. Add in the pasta and allow to cook 7-8 minutes.
  2. Drain cooked pasta in a colander in the sink; do not rinse.
  3. Toss mushrooms, zucchini and red onion in with the hot pasta and stir with a wooden spoon.
  4. Once pasta has cooled down to room temperature, transfer it to a bowl and stir in 2 tablespoons pesto. Taste and add more pesto as needed.
  5. Cover bowl with plastic wrap and place in the refrigerator for 1 ½ – 2 hours to cool before serving.
  6. Add cooked chicken breast to turn this from a cool side dish to a quick main dish perfect for a hot day.
