• Ingredients:
  • 2 tablespoons olive oil
  • 8oz package of sliced FunGuy white button mushrooms
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 pinch of salt
  • 4 sundried tomatoes, chopped
  • 8 slices of bread
  • 4 tablespoons butter, softened
  • 8 slices of Gouda cheese

April showers will certainly bring May flowers, but you know what else it brings? National Grilled Cheese Sandwich Day and there’s no whey we can pass that up!

This year the FunGuy wants to your celebratory grilled cheese to not only be cheesy and mushroom filled, but with the gourmet touch of sweet sundried tomatoes and lightly caramelized onions.

DIRECTIONS:

  1. Heat the olive oil in a pan over medium high heat. Add the onions and garlic to the pan and cook for 1 minute. Reduce the heat to medium and allow the onions to cook another 1 minute or until softened and lightly browned. Toss in the FunGuy mushrooms and sauté for 3 minutes. Season the mushrooms with a pinch of salt and cook another 2 minutes before transferring to a bowl and return the pan to the stove top.
  2. Butter one side of the bread with a ½ tablespoon of butter and lay it on the bottom of the hot pan with the butter side down. Quickly layer the bread with a slice of cheese, the mushroom and onion mixture, a bit of sundried tomatoes and another slice of cheese on top. Butter another slice of bread and place it on top of the last layer with the butter side up.
  3. Allow the sandwich to cook 1-2 minutes before carefully flipping with a spatula and letting it cook another 2-3 minutes or until golden brown on each side. Repeat with the rest of the sandwiches.
  4. Allow the sandwiches to cool about 2-3 minutes before serving!
