• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 large carrot, diced
  • 1 small sweet potato, peeled and diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • ½ teaspoon dried rosemary
  • ½ cup walnuts, roughly chopped
  • 1 15 oz can of lentils, drained and rinsed
  • 1 1/2 cup bread crumbs
  • 3 eggs
  • 1/4 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons ketchup

Looking to reduce the amount of meat in your diet, but don’t know how to ease the family into it? Try the FunGuy’s “meat” loaf that is full of blended mushrooms, veggies, some walnuts and a good dose of lentils!

Easy to put together and we assure you the meat won’t be missed with all the delicious flavor packed inside.

DIRECTIONS:

  1. Preheat the oven to 350F.
  2. Gently brush off any debris from the FunGuy mushrooms with a damp cloth and roughly dice all but one mushroom. Slice that mushroom and put it aside. Put half the diced mushrooms into large bowl and set aside
  3. Heat the olive oil in a sauté pan over medium high heat. Add the onion and garlic and cook 2 minutes. Next add in the rest of the diced mushrooms, carrot and sweet potato then season with thyme, sage, and rosemary. Cook, stirring occasionally, 8-10 minutes or until the carrots and sweet potato are tender. Add in the walnuts and cook 2 minutes. Turn off the heat.
  4. Transfer the cooked vegetables to the bowl with the uncooked mushrooms. Add in the lentils, bread crumbs, and eggs. Break the yolks of the eggs with a wooden spoon and stir well to combine. Add the salt, pepper and Worcestershire sauce to the bowl and stir well.
  5. Line a loaf pan with parchment paper and spoon in the mushroom loaf mixture. Press it down with your hands to keep it tight together. Spoon the ketchup on top of the loaf and spread it out evenly over the top. Place the mushroom slices on top and put the loaf into the oven.
  6. Bake the mushroom “meat” loaf for 25-30 minutes or until the mushrooms on top have browned that the ketchup has become a sticky crust on top.
  7. Remove the mushroom loaf from the oven and allow it to cool 5 minutes before removing the loaf from the pan and cutting it into slices for serving.
  8. Serve immediately.
