• Ingredients:
  • 3 tablespoons olive oil, divided
  • 8oz package of sliced FunGuy white button mushrooms
  • 2 cloves garlic, minced
  • 4 eggs
  • 4 tablespoons mayonnaise
  • 1 large avocado, skin and seed removed and sliced
  • 2 tomatoes, sliced
  • 1 cup baby red leaf lettuce
  • Pinch of salt and black pepper
  • 4 Sandwich buns or 8 slices of bread

Brunch may be the number one way to be food efficient on the weekend, but a FunGuy brunch is even better!

No need to learn how to poach an egg or whip up some waffle batter. This late morning/early afternoon fare is quick and easy because it’s the ultimate in easy food; a sandwich!

The only real work is frying up an egg and sautéing a handful of FunGuy mushrooms. Some assembly is required.

DIRECTIONS:

  1. Heat 1 tablespoon of olive oil in a sauté pan over medium high heat. Add in the garlic and cook 1 minute. Add in the mushrooms and sauté 3-4 minutes or until lightly brown. Transfer to a bowl and cover to keep warm.
  2. Reduce the heat to medium low and add the other 2 tablespoons of olive oil in the pan. Crack the eggs into the pan, careful not to break the yolk. Allow the eggs to cook until the whites have set and the yolk is still runny. Turn off the heat.
  3. To assemble the sandwich spread the mayo thinly on each slice of bread and layer avocado slices, lettuce, tomato, sautéed mushrooms, and egg. Top with the other piece of bread and cut in half before serving.
  4. Serve immediately with a side of French fries, chips, or, if you’re feeling healthy, a salad!
