• 4 boneless skinless chicken breasts
  • salt and pepper
  • 2 tablespoons olive oil
  • 8oz package of sliced FunGuy white button mushrooms
  • 1 small onion, sliced
  • 2 large bell peppers, sliced
  • 2 tablespoons honey
  • 1 cup white wine or chicken stock

The ancient Romans thought mushrooms to be “food of the gods”. They were often served at festivals and special gatherings and were believed to empower warriors with great strength.

What does that tell us? Something that we all knew already; embrace the “food of the gods” and get our warrior on with a delicious healthy recipe of caramelized sweet peppers and chicken inspired by the FunGuy!

DIRECTIONS:

  1. Season chicken with salt and pepper and heat olive oil in a skillet over high heat. Lay chicken breasts in the pan and allow to brown on each side; 2-3 minutes each side.
  2. Transfer the chicken to a cutting board, turn the heat down to medium-high and toss in FunGuy mushrooms, sliced onions and bell peppers. Allow to cook for 5-6 minutes, stirring frequently. Reduce the heat to medium-low and allow to cook an additional 10-15 minutes stirring occasionally, or until browned and sweet.
  3. Stir in the honey and white wine or chicken stock.  Return the chicken to the pan and cover with a  lid. Allow the liquid to reduce to half and the chicken to cook through, about 10 minutes.
  4. Serve with your choice of rice, pasta or potatoes!
