• Ingredients:
  • 3 tablespoons olive oil
  • 1 carrot, diced
  • 1 shallot, minced
  • ½ cup diced ham
  • 8oz package of sliced FunGuy white button mushrooms
  • 2 leeks, sliced
  • ½ teaspoon minced rosemary
  • ½ teaspoon dried thyme
  • 4 tablespoons flour
  • 4 cups vegetable broth
  • 2 cups half and half
  • 1 pound potato gnocchi
  • Salt and black pepper to taste

Perfect for any rain or snow filled day where you just need something cozy to warm you from head to toe!

DIRECTIONS:

  1. Heat the olive in a large pot over medium high heat. Add in the carrot and shallot, stirring, and cook 2 minutes. Add in the ham and cook another 5 minutes or until lightly browned. Reduce heat to medium and add in the mushrooms, leeks, rosemary, and thyme cook 5 minutes or until the leeks are tender. Sprinkle the flour over the vegetables and ham and toss to coat. Cook 3-4 minutes.
  2. Pour the broth into the pot while stirring to avoid clumping, and bring to a boil. Allow to cook about 10 minutes.
  3. Bring a pot of water to a boil over high heat. Once it’s boiling, add in the gnocchi and allow them to cook until about 1 minute after they raise to the surface. Drain the gnocchi of excess water in a colander and set aside.
  4. Pour the half and half into the pot with the soup and stir well to combine. Allow it to return to a boil, reduce the heat to medium low and let it simmer another 10 minutes.
  5. Add the gnocchi to the soup pot. Taste the soup and season with salt and black pepper to taste. Cook an additional 5 minutes.
  6. Serve hot.
