• Ingredients:
  • 2 tablespoons olive oil
  • 8oz package of sliced FunGuy white button mushrooms
  • 1 large bell pepper, sliced
  • 1 onion, sliced in half moons
  • A couple pinches of salt
  • 8 eggs
  • ¼ teaspoon ground cumin
  • Pinch cayenne pepper flakes
  • 2 medium sized tomatoes, diced
  • ½ cup shredded white cheddar cheese
  • 8 wheat tortillas

Everyone likes burritos for breakfast. Think outside the box and do soft tacos instead, you little rebel you!

Layer that spicy egg taco full of bright red tomatoes, gooey cheese, sweet sautéed peppers and onions, and meaty FunGuy mushrooms. It’s an eggcellent way to break your fast and start the day thinking outside the burrito!

DIRECTIONS:

  1. Heat the olive oil in a sauté pan over medium high heat. Add in the FunGuy mushrooms and sauté until lightly browned. Remove the mushrooms from the pan and add in the sliced onion and bell pepper. Sauté until onion had browned slightly and add the mushrooms back into the pan. Season with a pinch of salt and cook the mushrooms, onion and bell pepper an additional 2 -3 minutes. Transfer to a bowl and set aside.
  2. Beat the eggs in a large bowl with a fork until frothy and season with a pinch of salt, cumin and cayenne pepper flakes. Pour the beaten eggs into the pan and cook on medium low, stirring frequently with a wooden spoon. Once the eggs are no longer wet they are done.
  3. Place two tortillas on each plate and evenly spoon eggs onto each. Add mushrooms, onions and bell pepper to the top of the eggs. Next sprinkle the diced tomato and shredded cheese on top of each taco.
