• Ingredients:
  • 10 oz package of FunGuy Mushroom Stuffers
  • ½ pound ground beef
  • 1 clove garlic, minced
  • ¼ teaspoon salt, plus a pinch
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 small red onion, sliced
  • 4-5 cherry tomatoes, sliced
  • 1-2 leaves lettuce, broken into 1 inch pieces
  • 2 slices cheese, cut into 1 inch squares

Forget that happy meal and go for a Fun meal with these mini mushroom burgers!

A mini burger that is perfect for a summer cocktail party, birthday party, or just because. Whip up a batch of FunGuy ketchup and you’ve got the start to an ultimate summer time FunGuy feast!

DIRECTIONS:

  1. Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and/or a small teaspoon to remove any leftover bits and finely mince the stems and place them in a bowl. Put the mushroom caps to the side.
  2. Add the ground beef, garlic, salt, and pepper to the mushroom stems and mix it together well with your fingers. Roll the meat and mushroom mixture into small balls them pat them flat into about 1 inch, or the size of a mushroom cap, diameter patties. Set aside.
  3. Brush the olive oil on a grill pan or in a sauté pan over medium high heat. Place the mushroom burger patties on the grill and allow them to cook about 3 minutes on each side or until cooked through. Transfer the cooked patties to paper towel lined plate and cover with a tented piece of aluminum foil to keep them warm.
  4. Lay the mushroom caps on the grill top side down, season with a pinch of salt, and allow them to cook 2-3 minutes before flipping and grilling the other side. The liquid in the mushroom caps should seep out a little and grill marks should form. Transfer to the plate with the patties to keep warm.
  5. Lay the patties back on the grill and place a piece of cheese on each patty and cover it with a domed lid to help the cheese melt. Allow them to cook no longer than 1 minute and transfer back to the plate when done.
  6. To assemble the mini FunGuy burgers, place one mushroom cap on top side down and add a burger patty, a slice of red onion, cherry tomato, and lettuce then top with another mushroom cap. Stick a tooth pick through the middle to keep it all together.
  7. Serve immediately!
