• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 4 boneless skinless chicken breasts
  • Pinch of salt
  • 3 cloves garlic
  • 2 tablespoons minced fresh ginger
  • 1/3 cup rice wine vinegar
  • 3 tablespoons honey
  • ¼ cup soy sauce
  • ¼ cup sesame oil or olive oil
  • 1 cup shredded red cabbage
  • 1 cup watercress
  • ¼ cup shredded carrot
  • 3 cups romaine lettuce, chopped
  • ¼ cup chopped peanuts

Marinating isn’t just for infusing flavor to meats and vegetables, it works wondering on elevating the simple mushroom too!

All it takes is an extra few minutes and those little FunGuy caps become something even more special. Take this marinade that not only gives that bit of oomph to those mushrooms, but doubles as a salad dressing when all else is done!

DIRECTIONS:

  1. Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem and discard. Transfer the mushrooms to a bowl and set aside.
  2. Lay the chicken out on a cutting board and season both sides with salt.
  3. In bowl whisk together garlic, ginger, rice wine vinegar, honey, and soy sauce. Pour half of the vinaigrette into the bowl with the mushrooms and allow them to marinate for about 10 minutes.
  4. Heat 1 tablespoon of the oil in a non-stick cooking pan over medium high heat. Add the chicken to the pan and cook 3-4 minutes or until browned. Turn the chicken over and cook another 2 minutes. Add the mushrooms and the marinade into the pan, reduced heat to medium, and cook 6-7 minutes, or until the chicken is cooked through and the marinade has become thick.
  5. Transfer the cooked chicken and mushrooms to a cutting board to rest while prepping the salad.
  6. Place the cabbage, watercress, carrot, and romaine lettuce in a large bowl and toss together. Place the mixed salad on a plate or bowl.
  7. Slice the chicken and place one whole breast on each salad plate. Slice the mushrooms and add them to the salads. Add the rest of the oil to the other half of the vinaigrette and whisk well before drizzling it on top of the salads. Top off with chopped peanuts and serve immediately.
