• Ingredients:
  • 8oz package of sliced FunGuy white button mushrooms
  • 2 tablespoons light soy sauce
  • 1 tablespoons rice vinegar
  • 1 clove garlic, minced
  • 1 teaspoon sesame oil
  • 1 large carrot
  • 6 red radishes or 1 diakon radish
  • ½ cup rice vinegar
  • 2 tablespoons sugar
  • 1 French baguette (about 2 feet)
  • Mayonnaise
  • FunGuy Mushroom Pâté
  • 1 cucumber, sliced
  • Bunch fresh cilantro
  • Fresh mint leaves
  • 1 jalapeno, sliced
  • 1 lime

Need a refreshingly tangy, sweet and savory crunchy bite for lunch? Look no further than the FunGuy’s interpretation of a Vietnamese Bahn Mi!

This vegetarian version of the classic doesn’t disappoint with the same pickled vegetables for crunch, fresh cilantro, and flavor infused sliced mushrooms. And no need to skimp on the pate, as it used our very own FunGuy mushroom pâté recipe too!

DIRECTIONS:

  1. Place the FunGuy mushrooms into a bowl with the soy sauce, vinegar, garlic, and sesame oil. Toss to coat the mushrooms well. Set aside to marinate for 10 minutes.
  2. Peel the carrots, wash the red radishes or peel the daikon radish and cut them into matchsticks on a cutting board. Put them in a bowl with the ½ cup rice vinegar and sugar. Allow these to pickle for 10 minutes.
  3. Drain the mushrooms of the marinade before assembling the sandwich.
  4. Lay the French baguette on a cutting board and cut it in half lengthwise. Spread mayonnaise on one side of the bread and the FunGuy mushroom pâté in the other side. Layer the bread with cucumber slices and the pickled carrot and radish on one side, and cilantro and mint leaves on the other side. In between those add the marinated mushrooms and jalapeno slices. Cut the lime in half and squeeze it over the sandwich.
  5. Serve immediately.
