• 3 tablespoons peanut oil
  • 8oz package of sliced FunGuy white button mushrooms
  • 4 cups fresh broccoli florets
  • 3 cloves garlic, minced
  • 2 tablespoons minced ginger
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 2 tablespoons water
  • 1 tablespoons corn starch

Happy 2014! It’s that time again to make some new resolutions for the upcoming year. Most of which will be renounced by the end of the week.

Don’t fret though, the FunGuy is here to help you stick to at least one new year goal; eating healthier! Healthy food doesn’t have to taste bland. With recipes like this broccoli and mushroom stir fry, there’s plenty of flavor and no need to feel bad when you go for that extra serving either!

DIRECTIONS:

  1. Heat the oil in a large pan over medium heat. Add in the garlic and sauté until lightly browned.
  2. Whisk together, soy sauce, vinegar, and sugar in a small bowl.
  3. Add the FunGuy mushrooms, broccoli florets and ginger to the pan and toss with the garlic. Pour the soy sauce mixture over the mushrooms and broccoli, stirring to combine. Cover with a lid and allow to cook about 6-8 minutes or until broccoli is bright green and tender, stirring occasionally.
  4. In another small bowl, dissolve the cornstarch in the water.
  5. Once the broccoli has cooked, remove the lid and pour the cornstarch into the pan and mix well to combine. Allow to cook about 1 minute longer and the sauce has thickened.
  6. Serve hot either over steamed rice or as is!
