• Ingredients:
  • 1 cup cherry tomato halves
  • 4 cloves of garlic, peeled
  • 8oz package of whole FunGuy white button mushrooms
  • 2 zucchinis
  • 1 eggplant
  • 2 medium bell peppers
  • 1 onion, sliced
  • 1 sprig fresh thyme
  • 1 sprig fresh oregano
  • 1 sprig fresh basil
  • Olive oil
  • Salt to taste

Rat-a-tooey!

That won’t be the issue with this FunGuy ratatouille! Fresh healthy vegetables straight from the garden cooked over an open fire and then tossed together with some meaty, smoky grilled FunGuy mushrooms make it hearty enough for a hot summer day’s main dish or as a side when something more substantial is the order of the day!

DIRECTIONS:

  1. Lightly brush olive oil on the grill and set it to medium high or build a medium sized fire with charcoal.
  2. Take aluminum foil and place the cherry tomato halves and peeled garlic on to it. Wrap the foil around the tomatoes and garlic to make a “purse” and seal the top by twisting the top slightly. Place it on the grill and allow it to cook while preparing the rest of the vegetables.
  3. Clean the FunGuy mushrooms by brushing any debris from them with a damp cloth and trim the stems. Trim the ends of the zucchini and eggplant then slice them lengthwise about 1/8th inch thick. Remove the stem and seeds from the bell pepper and cut them into 1 inch strips. Peel the onion and cut it into rounds.
  4. Place the bell pepper on the grill skin side down and allow it to cook about 5-7 minutes. Once the skin has charred, remove it from the grill and allow it to cool.
  5. Lightly oil the mushrooms, zucchini slices, and eggplant slices with the olive oil and lay them out on the grill to cook 3-5 minutes. Once char marks form turn them over and allow them to cook 2-4 more minutes. Remove them from the grill and place in a large bowl.
  6. Peel the outside skin from the bell peppers with your fingers and add it to the other vegetables and mushrooms.
  7. Remove the stems from the basil, oregano and thyme and add it to the vegetables along with a pinch of salt and a drizzle of olive oil.

Serve warm.
