• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 3 cups baby spinach
  • 2 3oz salmon filets
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 lemon, juiced and zested
  • Salt and black pepper to taste

While there isn’t mushroom in our recipe archive for something a little fishy, you can always count on salmon to come up with more!

Like this tasty last-minute FunGuy dinner idea that features the aforementioned puns. Stir up a little honey mustard sauce to go on top and lay them on a bed of fresh spinach, and it’s all set to go.

Dinner will be done in no time!

DIRECTIONS:

  1. Preheat oven to 375F.
  2. Brush off any debris from the FunGuy mushrooms with a damp cloth. Cut the mushrooms into quarters. Rinse the spinach well and let drain of excess water in a colander. Place the mushrooms and spinach in an oven safe dish.
  3. Whisk the mustard, honey, and lemon juice together in a small bowl.
  4. Place the salmon in the baking dish on top of the spinach and in between the mushrooms. Pour the mustard sauce over the salmon and season everything with the salt and pepper.
  5. Bake the salmon, mushrooms, and spinach for 7-9 minutes or until the salmon is an opaque color in the middle and the mushrooms are tender.
  6. Remove the salmon from the oven and garnish with lemon zest and more salt and pepper to taste.
  7. Serve immediately.
