• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 1 bell pepper
  • 1 pound ground chicken
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • 1 lemon
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 medium cucumber
  • 1 cup Greek yogurt
  • ½ tablespoon chopped fresh dill
  • Salt and black pepper to taste
  • 4 burger buns
  • 1 tomato, sliced
  • 1 red onion, sliced
  • 4 lettuce leaves, washed

The sun is shining, birds are singing and the tummy is rumbling!

The FunGuy says tame that hunger with something beyond just fresh and healthy, but packed with bright lemon flavor like this lemon chicken FunGuy burger. Finish it with a dollop, or two, of refreshing cucumber yogurt sauce.

A burger that will have everyone calling for you to tzatziki it again!

DIRECTIONS:

  1. Brush off any debris from the FunGuy mushrooms with a damp cloth, then trim the ends and cut them into quarters. Remove the stem and seeds from the bell pepper and slice lengthwise. Set aside.
  2. Place the ground chicken in a bowl and season with the black pepper and salt. Grate the lemon peel into the chicken and cut the lemon in half. Squeeze on half of the lemon in with the chicken and set the other half to the side. Add in half of the minced garlic, and using your hands, mix the chicken well to evenly distribute the seasoning.
  3. Divide the chicken into 4 even sized portions and roll each into a ball before flattening them down into burger patties.
  4. Brush the olive oil onto a grill pan with a paper towel, before placing it on a stove top over medium high heat. Once the pan is hot, lay the patties on to the pan and allow them to cook 6-8 minutes on each side or until no longer pink in the middle. Transfer the patties to a plate and allow them to rest a couple of minutes before assembling the burgers.
  5. While the burgers are cooking, make the tzatziki sauce.
  6. Peel and trim the ends off the cucumber then cut them down the middle length wise. Scoop out the seeds and discard them. Grate the cucumber into a bowl lined with paper towels. Once it’s been grated, gather the towels up around the cucumber and squeeze out as much of the excess water as possible into the sink, then transfer the cucumber back to the bowl and discard the towels.
  7. Add the yogurt, dill, and the rest of the garlic to the bowl. Squeeze the other half of the lemon juice into the mixture and stir well. Season the tzatziki with salt and pepper to taste.
  8. While the chicken patties cool, add the FunGuy mushrooms and bell pepper slices to the hot grill pan to cook, turning occasionally, for about 5 minutes or until grill marks form and they’ve become tender.
  9. To assemble the burger, spoon some tzatziki on both halves of the bun and spread it out to the edge. Layer the chicken burger on the bottom half, then mushrooms and peppers, tomato, onion, lettuce and top with the other half of the bun. Repeat with the rest of the burgers and serve immediately.
