• Ingredients:
  • 10 oz package of FunGuy Mushroom Stuffers
  • 2 large baked potatoes
  • 3 tablespoons butter, softened
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ sour cream, divided
  • 3 tablespoons shredded cheese, divided
  • 2 slices of thick cut bacon
  • 1 tablespoon chopped fresh chives

When you’re dying for the taste of a fully loaded baked potato but don’t want an entire one, just a bite, look to the FunGuy to guide you to a happy potato place!

These stuffers are exactly what you’ve been looking for but in bite size. There’s even enough to share with the whole family!

DIRECTIONS:

  1. Preheat the oven to 375F.
  2. With a damp paper towel, gently clean each FunGuy mushroom of any debris. Pop out the stems and discard. Transfer the mushroom caps, hole side up, onto a baking sheet lined with baking paper.
  3. Cut open the baked potatoes and scoop out the inside into a bowl. Add in the butter, salt, pepper, half of the sour cream, and 1 tablespoon of the cheese and mix well with a fork.
  4. Spoon the potato mixture into each mushroom cap and sprinkle the rest of the cheese on top. Place the mushrooms into the oven and allow them to bake for about 15 minutes or until the cheese has melted and the potato has browned lightly around the edges.
  5. While the mushrooms cook prepare the bacon.
  6. Cut the bacon into small cubes on a cutting board. Heat a small pan over medium high heat and add the bacon to it. Cook until the bacon is crisp and cooked through. Transfer the cooked bacon to a paper towel lined plate to let it drain off excess grease.
  7. Remove the mushrooms from the oven when they are done and top each with a dollop of sour cream, bacon bits, and fresh chives.
  8. Serve immediately.
