• Ingredients:
  • 16oz of macaroni pasta
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 small onion, minced
  • 1 pound ground beef
  • 8oz package of sliced FunGuy white button mushrooms
  • 2 cups shredded red cabbage
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 12oz beer (non alcoholic if you prefer)
  • 1 cup whole milk
  • 12oz shredded sharp white cheddar cheese
  • Pinch of salt and black pepper

Oktoberfest may be over and done with, but that doesn’t mean the love of all things meat, beer, cabbage, and cheese are done!  In fact we’ve got another reason to indulge in all the above with the addition of FunGuy mushrooms to top it all off.

This creamy beef mac and cheese is an adult version of the classic that comes with a twist; the earthy flavors of mushrooms, beer and cabbage!

DIRECTIONS:

  1. Bring a pot of water to boil on the stove and add the macaroni pasta. Cook 7-9 minutes or until cooked through. Drain the pasta of excess water and return it to the pot, but not to the heat.
  2. While the pasta cooks prepare the beef, mushrooms and cabbage.
  3. In a large sauté pan heat the olive oil over medium high. Add in the garlic and onion and cook 2 minutes. Add in the ground beef and allow it to brown before breaking it up with a spatula or wooden spoon. Once the beef is cooked through transfer it from the pan to a bowl and set aside.
  4. Toss the FunGuy mushrooms into the sauté pan and cook 4-5 minutes or until lightly browned. Add the red cabbage to the pan and allow it to cook until tender, about 8-10 minutes. Transfer the mushrooms and cabbage to the bowl with the beef.
  5. Reduce the heat to medium and melt the butter in the bottom of the sauté pan. Whisk in the flour to create a thick paste and allow it to cook 1-2 minutes. Pour in the beer, stirring continuously. Once the beer is fully incorporated, add in the milk, again stirring continuously.
  6. Bring the mixture to a simmer, stirring frequently. Now add in the cheese, stirring well to fully incorporate it. Cook, stirring frequently, and allow the cheese to melt fully.
  7. Pour the beef, mushroom and cabbage mixture into the pan with the pasta then pour the cheese sauce on top. Stir well to combine and coat everything with the creamy, cheesy beer sauce. Season with salt and pepper to taste.
  8. Serve immediately.
