• Ingredients:
  • ½ cup warm water
  • 1 envelope yeast
  • 1 ¼ cup room temperature water
  • 4 cups flour, plus some for kneading
  • pinch salt
  • 2 tablespoons oil, divided
  • 1 ½ cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 8oz package of sliced FunGuy white button mushrooms
  • 1 red bell pepper, sliced thinly
  • fresh basil leaves

What food has been around since the Roman age, was popular with royalty and common folk alike, and has over one hundred variations?

That’s right, pizza!

October is national pizza month, which means there is now an excuse to make pizza anyway we want. With that many variations though, it doesn’t leave mushroom for improvement unfortunately. As long as it comes with a healthy dose of our favorite FunGuy, we’re sure to be happy. Enjoy this month long pizza party!

DIRECTIONS:

  1. Proof the yeast in the ½ cup warm water by sprinkling it over the surface of the water and allowing it to sit for 5 minutes. It will be foamy.
  2. Put half of the flour and salt into a bowl and stir together with a whisk. Pour room temperature water and 1 tablespoon olive oil into the flour and stir together with a wooden spoon. Once the yeast is foamy, add that to the flour and water mixture and stir to combine. Add in the rest of the flour and stir until a sticky ball forms.
  3. Turn the dough out onto a well floured surface and knead 5-7 minutes or until a smooth, soft ball has formed.
  4. Use 1 tablespoon of olive oil to oil a clean bowl and place the dough ball into it, turning it so that it’s covered in the oil. Cover the bowl with a warm damp cloth and allow the dough to rise for 15-20 minutes.
  5. Preheat the oven to 450F.
  6. Once the dough is ready, divide it into 16 equal pieces and roll each into a ball. Lay them out on a cutting board, making sure they don’t touch, and cover with the warm damp cloth and allow to rise for an addition 10 minutes.
  7. Using your hands, pat the dough ball into round disks. With finger tips, gently pull and push the dough from the middle outward to the edges to create a thicker crust and thinner middle. Transfer each pizza to a baking sheet lined with parchment paper.
  8. Spread marinara sauce over the middle of the pizza dough with a spoon. Sprinkle mozzarella cheese, a couple of bell pepper and FunGuy mushroom slices on top.
  9. Bake in the oven 7-10 minutes or until the crust has risen and has become golden brown.
  10. Allow to cool 5 minutes before serving.
  11. If you don’t need this many mini pizzas all at once you can always freeze the dough that isn’t needed! Just allow it to rise for 30 minutes, punch it down and roll it into a ball and wrap tightly in plastic wrap and freeze until ready to use.
