• 8oz package of whole FunGuy white button mushrooms
  • 1 large onion, cut into small wedges
  • 2 cloves garlic, minced
  • 3 tablespoons olive oil
  • pinch of salt
  • Olive oil to drizzle
  • fresh parsley

Need a vegetarian side dish for your meatless Monday dinner? Here’s a recipe for one that includes pops of juicy bright cherry tomatoes and meaty FunGuy mushrooms. Not just colorful and tasty, but super easy to throw together. Just toss everything together and then shove into the oven while the rest of dinner gets going!

DIRECTIONS:

  1. Pre-heat the oven to 425F.
  2. Clean the FunGuy mushrooms by brushing them with a damp cloth to remove any debris and cut them into quarters. Peel and trim the onion. Cut the onion into 8 wedges and separate the layers. Place mushrooms, onion, garlic, olive oil and salt into a large bowl and toss to coat.
  3. Pour the mushroom mixture into a small casserole dish and place the cherry tomatoes in the casserole dish and drizzle lightly with olive oil. Roast for 35-40 minutes in the oven or until the skins on the tomatoes have split and they’ve started to become soft and the mushrooms have browned.
  4. Wash the parsley and pat it dry with paper towels. Roughly chop it and sprinkle on the mushrooms when they are cooked.
  5. Serve immediately.
