• Ingredients:
  • ¼ green bell pepper
  • ¼ red bell pepper
  • ¼ yellow bell pepper
  • 1 large tomato
  • ½ onion
  • Salt to taste
  • 1 lemon, juiced and zested
  • 4 eggs, beaten
  • 1 cup whole milk
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • 1 teaspoon fresh cilantro, minced
  • ½ teaspoon salt
  • 8 slices of bread
  • butter
  • 2 tablespoons olive oil
  • 8oz package of sliced FunGuy white button mushrooms
  • 4 dollops of sour cream
  • Cilantro

Not every FunGuy wants a bowl of sugary cereal or a stack of pancakes drowning in syrup in the morning. Some still want breakfast food though, just in a more savory sense. That means the first meal of the day is usually limited to toast or a plateful of meat, but no more!

Today throw together some French toast, but forget the sugar and cinnamon. Instead add some south of the border flavor with fresh pico de gallo, green cilantro, a squeeze of lemon, and a pile of sautéed mushrooms on top!

DIRECTIONS:

  1. On a cutting board dice the green, red and yellow bell pepper and place into a bowl. Dice the tomato and onion and add them to the bowl with the peppers. Season the pico de gallo with the salt to taste and lemon juice. Stir well and set aside.
  2. Pour the beaten eggs into a shallow bowl and add in the milk, cumin, paprika, cilantro, lemon zest and salt. Beat together with a fork.
  3. Melt the butter in a skillet over medium high heat.
  4. Dip the bread slices into the egg mixture, making sure to turn it to get both sides soaked. Place the bread into the hot pan and allow it to cook 2-3 minutes per side, or until each side is a golden brown. Transfer to a plate and repeat with the rest of the bread.
  5. Once all the bread has been turned into French toast, prepare the FunGuy mushrooms.
  6. Turn the heat up on the stove top and heat the olive oil in the skillet. Add in the mushrooms and sauté for 3-4 minutes or until cooked through and lightly browned. Turn off the heat.
  7. Divide the French toast between 4 plates and top with the sautéed mushrooms, pico de gallo, sour cream and extra cilantro on top.
  8. Serve immediately.
