• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 4 tablespoons olive oil, divided
  • 2 garlic cloves, minced
  • ½ teaspoon ground cumin
  • ½ teaspoon paprika
  • 1 lemon, juiced
  • Pinch of salt
  • Fresh cilantro

Did you know that certain fossils in Canada were uncovered in 1859 that show mushrooms may have covered the earth before trees and other plants! They were thought to have even reached up to 24 feet in height and the largest living fungus may be a honey fungus in the Blue Mountains of eastern Oregon. It’s said to be 2,200 acres large and about 2400 years old.

That’s one big FunGuy! Just think of how many different mushroom recipes could be made from a mushroom that size.

DIRECTIONS:

  1. Brush any debris from the FunGuy mushrooms with a damp cloth and trim the stems on a cutting board.
  2. Place the cleaned mushrooms into a bowl with half the olive oil, garlic, cumin and paprika. Toss to coat the mushrooms evenly with oil and seasoning.
  3. Heat the rest of the oil in a skillet over medium high heat. Place the mushrooms in the pan and cook for 10-15 minutes, stirring occasionally to keep it from burning. Once browned and tender, remove the mushrooms from the heat and season with salt, fresh lemon juice and cilantro. Toss everything together and serve immediately.
