• Ingredients:
  • 1 lb fettuccine pasta
  • 8oz package of sliced FunGuy white button mushrooms
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lb shrimp, peeled and deveined
  • 1 lemon, juiced
  • Salt to taste
  • Fresh parsley, minced

Just because the heat of summer is still upon us doesn’t mean we can’t get a little comfortable, and what’s more comforting than a plate of pasta? Luckily the FunGuy has just the pasta dish to help with that comfort craving without weighing you down.

Add a bite of sautéed shrimp and mushrooms to some fettuccine and toss with an herbed lemon parsley olive oil and voila! That’s what we call instant comfort.

DIRECTIONS:

  1. Put fettuccine into a pot of salted boiling water and allow it to cook about 7-8 minutes or until al dente.
  2. While the pasta is cooking prepare the shrimp and mushrooms!
  3. Heat olive oil in a sauté pan over medium high heat. Add in garlic and cook until lightly browned, about 1 minute.
  4. Add in the FunGuy mushrooms and sauté 3-4 minutes with the garlic.
  5. Add the shrimp to the pan and stir. Cook the shrimp until it’s pink and no longer translucent. The shrimp should curl into a ‘C’ shape when done.
  6. Once the pasta is cooked add it to the shrimp and mushrooms and add half a ladle of the pasta water and toss together. Season the pasta with lemon juice and salt, tossing again to evenly coat the pasta. Sprinkle fresh parsley on top.
  7. Serve with a green side salad and enjoy!
