• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 2 tablespoons olive oil, plus extra for drizzling
  • 1 large onion, chopped
  • 2 cloves of garlic, crushed
  • 2 sprigs of fresh thyme, stems removed
  • 2 tablespoons balsamic vinegar
  • Salt to taste

The word pâté often brings to mind stuffy restaurants with sky-high prices and ground liver served on pretentiously pretty plates. Pâté like that may be off putting, but when the FunGuy does it, it’s done tasty, it’s done reasonably, and it’s vegan with some delicious mushrooms!

No pretentious plating necessary either. Just a nice little bowl and a few crackers helps turn an old classic into something palatable for the masses!

DIRECTIONS:

  1. Brush off any debris from the FunGuy mushrooms with a damp cloth and trim the ends. Cut 1 mushroom into thin slices and set aside. Roughly chop the rest of the mushrooms.
  2. Heat the olive oil in a sauté pan over medium heat. Once the oil is warm add in the onion and garlic and cook, stirring occasionally, for 2 minutes. Add in the mushrooms and all but a pinch of thyme to the pan and cook about 8 minutes, stirring occasionally.
  3. Once the mushrooms have browned, season them with salt and pour in the balsamic vinegar. Cook for an additional 2-3 minutes or until most of the liquid has evaporated.
  4. Put the mushroom, garlic and onion mixture into a food processor or blender and blend until smooth.
  5. If the pâté has too much liquid, place it in a cheese cloth or coffee filter and either squeeze the extra liquid out or allow it to drain a bit before serving.
  6. Just before serving, sauté the mushroom slices in a small amount of olive oil for 2-3 minutes or until browned around the edges.
  7. Add the sautéed mushrooms slices on top and the pinch of thyme for garnish.
  8. Serve warm or room temperature with crackers or toasts.
