• INGREDIENTS:
  • 2 Packs/ 8 oz Fresh White FunGuy Mushrooms (sliced) **
  • 6 Cups Prepared and Chopped Romaine Lettuce
  • 1 Yellow Onion (cut into thick strips)
  • 1 Green Pepper (cleaned and cut into strips)
  • 2 Cups of Tortilla chips
  • 1 Cup of Shredded Cheese
  • 1 Cup of your favorite Mexican Salsa
  • 1/2 Cup of Ranch Dressing
  • 2 Tablespoons of Ex. Virgin Olive Oil
  • Salt and Pepper

Are you the type that loves to fry up a ton of mushroom and onions to top your steak? Do you end up secretly eating half of the mushrooms out of the skillet before the meal is served?

If this sounds like you, you might be a helpless mushroom lover, and you might possibly need the help of a support group. In the meantime, fresh FunGuy Mushrooms can take you on a culinary adventure with this tasty, inexpensive salad that indulges your passion for mushrooms!

**FunGuy Mushrooms appreciate being softly brushed or wiped with a damp paper towel. (We get grumpy when soaked or sprayed before cooking!)

DIRECTIONS:

  1. Heat a large skillet over medium-high heat with one tablespoon of oil.
  2. Once hot, add as many Funguy Mushrooms in the pan as fit comfortably without crowding them in a single layer. Cook until brown on both sides. Set the cooked mushrooms aside while preparing another batch of mushrooms.
  3. After the mushrooms are done, add another tablespoon of oil to the skillet and cook the yellow onion. Cook until golden brown.
  4. Add the green pepper strips and cook until soft. Season veggie mixture and mushrooms lightly with salt and pepper.
  5. To plate, put three cups of romaine lettuce on a plate, sprinkle a crumble of tortilla chips on top for some crunch.
  6. Top with onion/ pepper mixture.
  7. Top that with a heaping scoop of mushrooms and some shredded cheese.
  8. Mix the salsa and ranch for a delicious dressing to top. Let your taste buds guide the proportions of each layer and make it your own.
