• 2 tablespoons oil
  • 8oz package of sliced FunGuy white button mushrooms
  • 1 cooked sausage, diced
  • 4 eggs, beaten
  • 1oz shredded cheese
  • Salt and pepper to taste
  • 1 premade pie crust
  • 2 tablespoons melted butter

Sometimes the most important meal of the day calls for some eggstreme measures! Luckily with the FunGuy in charge of breakfast, it’ll just be a little cheesy and nothing too eggsagerated.

Just a half hour and a little effort and you’ve got something tasty and easy enough that you can make extra and save them for a quick breakfast to go middle of the week! That’s what we call an eggcellent idea!

DIRECTIONS:

  1. Preheat oven to 350F and line a baking tray with parchment paper.
  2. Heat the oil in a frying pan over medium high heat. Add the diced sausage and mushrooms to the pan and sauté for 2-3 minutes. Reduce the heat to medium low and pour the beaten eggs into the pan and stir to combine with the sausage and mushrooms. Gently, but frequently stir the eggs in the pan until just a little wet. Sprinkle the cheese into the eggs, stirring again to allow the cheese to melt and turn off the pan. Season with salt and pepper.
  3. Roll the pie crust out and cut out 4 circles with a large round biscuit or cookie cutter. Lay the pastry rounds on the baking sheet and spoon the egg and mushroom mixture onto half of the circle, careful to not over fill it. Fold the curst over on each to form a half circle. Seal the edges by pressing them together with the tines of a fork. Brush the tops of the turnovers with the melted butter.
  4. Bake the turnovers in the oven for about 20 minutes or until the crust is a golden brown.
  5. Allow to cool about 5 minutes before serving.
