• Ingredients:
  • 12 oz skinless, boneless chicken breast, cut into strips
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, peeled and minced
  • 2 teaspoons sesame oil, divided
  • 4 ounces uncooked chow mein noodles
  • 1 onion
  • 6 large bok choy leaves
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 tablespoon vegetable oil
  • 8oz package of sliced FunGuy white button mushrooms
  • Soy sauce to taste

Why did the FunGuy cross the road? So the chicken wouldn’t have to wok back to get to him!

This is just what’s needed to keep that chicken tender before turning it into a tasty dinner or lunch. It’s healthy and quick too, but we won’t tell anyone if you don’t.

DIRECTIONS:

  1. Place chicken breast strips into a bowl along with garlic, ginger and 1 teaspoon sesame oil. Mix well and cover with plastic wrap. Set the bowl aside to marinate while preparing the vegetables and noodles.
  2. Bring a pot of water to a boil and add the chow mein noodles. Once cooked, about 5 minutes or until tender, remove the noodles from the stove and drain of any extra water.
  3. On a cutting board, cut the onion into thin wedges and set aside in a bowl. Trim the ends of the bok choy leaves and cut into thin strips and set aside in a separate bowl. Next, remove the stem and seeds from the bell peppers and cut them into strips set aside in another bowl.
  4. Heat vegetable oil in a wok or deep pan over high heat. Add the chicken and allow it to cook until browned on the outside. Remove the chicken from the wok with a slotted spoon and place on a plate lined with paper towels to drain of excess oil.
  5. Add in the onion and allow to cook 2 minutes. Add in the FunGuy mushrooms, bok choy, and bell peppers to the wok and stir-fry the vegetables for about 5 minutes. Add the chicken back into the wok with the chow mein noodles and stir-fry another 2-3 minutes. Season the stir-fry with the rest of the sesame oil and soy sauce.
  6. Serve immediately.
