• Ingredients:
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 celery stalk, diced
  • 2 carrots, diced
  • 1 turnip, peeled and diced
  • 8oz package of sliced FunGuy white button mushrooms
  • 2 cups low sodium vegetable broth
  • 2 cups water
  • 1 cup cooked rice

Did you know that mushrooms are one of the foods highest in antioxidants and can stimulate the immune system? That’s not even including all the vitamins and minerals they are just bursting with.

You know what that means don’t you? Move over chicken soup and OJ! Mushroom vegetable soup is the new kid on the cold remedy/prevention block!

Here’s a recipe that’s just what Doctor FunGuy ordered.

DIRECTIONS:

  1. Heat olive oil in a pot over medium heat. Add in the onion, garlic, celery, carrots and turnip and sauté for 5 minute or until the carrot and turnip is slightly soft. Toss in the FunGuy mushrooms and sauté an additional 2-3 minutes. Pour in the vegetable broth and water and bring everything to a boil. Reduce heat to medium low and allow the soup to simmer for 20 minutes.
  2. Add the rice to the pot 5 minutes before serving.
  3. Serve hot.
