• Ingredients:
  • 1½ cups all-purpose flour
  • 3½ teaspoons baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cloves garlic, minced
  • 1½ teaspoon chopped fresh chives
  • 1 egg, beaten
  • 1¼ cup milk
  • 3 tablespoons olive oil
  • Light vegetable oil for cooking
  • 8oz package of sliced FunGuy white button mushrooms
  • 4 eggs
  • Chopped chives for garnish

Mardi Gras, or Fat Tuesday as the FunGuy likes to refer to it, has brought about one of the best food days ever; Pancake day!

Not all pancakes are created equal, however. Take these FunGuy pancakes for example. Full of mushrooms, garlic, and chives with a runny yolk for “syrup” and you’ve got the perfect savory Pancake day pancake!

DIRECTIONS:

  1. Whisk together flour, baking powder, salt, pepper, garlic, and chives in a bowl. Make a well in the middle of the flour mixture and add in the beaten egg, milk, and olive oil. Pull the flour into the center from the outside, stirring to combine and make a smooth, thick batter.
  2. Heat a small amount of vegetable oil, just enough to coat the pan, over medium heat. Lay 3-4 sliced of FunGuy mushrooms onto the pan just before pouring about 1/4th cup of pancake batter on top of them. Allow the pancake to brown before flipping and cooking the other side. Transfer the cooked pancake to a plate.
  3. Repeat with the rest of the batter, adding a tiny bit of oil to the pan between each pancake.
  4. Once the pancakes are all cooked, sauté any leftover mushrooms in the pan for 2-3 minutes. Transfer the mushrooms to a bowl, cover and set aside.
  5. Reduce the heat to medium-low and add about 2 teaspoons oil to the pan. Carefully crack each egg into the pan. Allow the eggs to cook until the whites have set and the yolk is still runny.
  6. Stack pancakes on 4 separate plates and top with the extra mushrooms. Add an egg and chopped chives on top of each and serve immediately.
