• Ingredients:
  • 2 tablespoons olive oil
  • 8oz package of sliced FunGuy white button mushrooms
  • 3 large scallions, chopped
  • 1 carrot, shredded
  • 3 tablespoons white wine or vegetable broth
  • 1 tablespoon all-purpose flour
  • Pinch salt and black pepper
  • 2 pre-made pie crusts
  • 2 tablespoons butter, melted

Who else loves the simplicity of handheld items? Less mess, less fuss, and in the case of food, so much more fun! Just the kind of fun perfect for a FunGuy!

Just stir up a bit of sliced mushrooms, scallions, and carrots and you have the makings for a quick handy meal. Good enough for both adults and kids alike!

DIRECTIONS:

  1. Preheat the oven to 375F.
  2. Heat the olive oil in a sauté pan over medium high heat. Add in the scallions and carrot and cook 2-3 minutes. Add the FunGuy mushrooms to the pan and sauté for another 3-4 minutes. Sprinkle the all purpose flour over the pan and stir to coat the mushrooms and scallions. Pour in the wine or broth, season with salt and black pepper and stir. Reduce the heat to medium low and allow everything to cook another 3-4 minutes or until the liquid has reduced down and become thick. It should just coat the mushrooms and not be saucy.
  3. Lay the pie dough out on a parchment lined baking sheet. Trim the ends to make it a square. Divide the pie dough into four equal sized squares and separate them so there are a few inches between each on the baking sheet. Do the same with the other pie dough on a cutting board, making sure they are the same size as each square on the baking sheet.
  4. Spoon some of the mushroom filling onto each dough square on the baking sheet, leaving about a half inch from each edge. Place a dough square from the cutting board on top of each square on the baking sheet. With a fork, press down hard on each side using the tines to seal the edges. Poke a couple of holes in the top of each hand pie to let steam escape. Brush butter on top of each pie.
  5. Place the baking tray in the oven and allow the pies to bake 15 minutes or until lightly golden brown.
  6. Remove the baking tray from the oven and allow the pies to cool at least 5 minutes before serving.
  7. These can be prepared before baking so it can be frozen and baked later as a quick meal or snack!
