• Ingredients:
  • 10 oz package of FunGuy Mushroom Stuffers
  • 2 oz feta cheese
  • 1 half red onion
  • 2 cloves garlic
  • 2 sprigs thyme
  • 1 sprig rosemary
  • ¼ cup olive oil
  • 1 lemon
  • Pinch of coarse salt
  • Fresh ground black pepper

Chips and dip are out! Marinated mushrooms and feta are in!

While the former has the reputation for being as easy as it gets, this recipe takes maybe 2-3 minutes more to put together and won’t get stale while it sits, just getting more delicious.

Plus it will totally impress all the guests. That is of course if it doesn’t get eaten before they arrive!

DIRECTIONS:

  1. Brush off any debris from the FunGuy mushrooms with a damp towel. Pop out the stems and discard. Cut the feta into ½ – 1 inch sized cubes. Peel the onion and garlic. Cut the onion into quarters then slice them thinly. Mince the garlic. Place the mushrooms, feta, onion, and garlic into a large bowl.
  2. Add the thyme, rosemary, and olive oil to the bowl. Cut the lemon in half and squeeze the juice into the bowl and add the salt and black pepper. Stir well to coat the mushrooms and feta well. Cover with plastic wrap and refrigerate for at least 20 minutes and up to the night before serving.
  3. To serve, pour the mushrooms into a serving bowl or deep plate. Place the feta cubes in each mushroom cap and add the rest of the herbs, onions, garlic, and olive oil to the dish.
