• INGREDIENTS:
  • 2 Tablespoons sweet butter
  • ½ lb. white button FunGuy Mushrooms, minced
  • ½ cup yellow onion, minded
  • 1 clove garlic, minced
  • 2 Tablespoons sour cream
  • 1 teaspoon lemon juice
  • ¼ cup chopped flat-leaf parsley

This is not your typical fishy egg spread! It’s mushroom caviar—the fungi are sautéed in butter, onion, garlic and melt in your mouth with each bite.

Dig in to this vegetarian version of the classic and there will be no turning back.

DIRECTIONS:
  1. Melt butter in a medium skillet.  Add onion and sautee at medium heat for 5 minutes – until light light brown.
  2. Add mushrooms and garlic and cook for another 5 minutes until the mushrooms are soft.
  3. Transfer mushroom mixture to a bowl and stir in sour cream, lemon juice and parsley.
  4. Add salt and pepper to taste.
  5. Serve with crackers or sliced baguette.
