• Ingredients:
  • 8oz package of sliced FunGuy white button mushrooms
  • 16 ounces penne pasta
  • 1 ½ cups fresh broccoli florets
  • 3 cloves garlic, minced
  • 1 shallot, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 cups milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese

This cheesy penne and broccoli FunGuy recipe is no joke though. Loaded with mushrooms, a creamy sauce, and a generous topping of cheddar cheese, this dish has the creamy, cheesy gouda-ness everyone craves!

DIRECTIONS:

  1. Preheat the oven to 400F.
  2. Bring a pot of salted water to a boil over high heat. Add in the penne pasta and allow to cook 5-6 minutes, or until almost done but still a little firm. Drain of excess water then transfer to a large bowl along with the broccoli
  3. While the pasta cooks make the sauce.
  4. In a deep sauté pan, heat the olive oil over medium high heat. Add in the garlic and shallot and cook 1-2 minutes or until lightly browned. Add in the FunGuy mushrooms and cook 5-6 minutes or until tender. Transfer the mushrooms to the pasta bowl.
  5. Return the pan to the stove and reduce the heat to medium low. Add the butter to the pan and allow it to melt. Sprinkle in the flour and stir to make a paste. Pour in the milk, stirring well with a whisk so that it doesn’t clump. Increase the heat to medium and bring the sauce to a boil.
  6. Reduce the heat to medium low and cook until the sauce has thickened a bit, about 2-3 minutes. Season with salt and pepper.
  7. Pour the sauce into the bowl with the mushrooms, pasta, and broccoli. Add half of the cheese and stir well to coat everything. Pour into a large casserole dish and sprinkle with the other half of the cheese.
  8. Bake in the oven for 15 minutes or until the top has started to brown and the cheese has melted.
  9. Allow to cool 5 minutes before serving.
